gin and tonic popsicle
The other day I was drinking cucumber water at West Elm pretending it's a Gin and Tonic like I do every Saturday and I start thinking of not only making a real Gin and Tonic when I get home but to make some Gin and Tonic popsicles.
A friend of mine gave me a bottle of Hendrick's Gin almost a year ago and this was my first time trying it. I definitely will be using it from now on. Its really smooth so for those who never had or gave up on Gin this is one to consider. Back to the popsicles. I made them twice one without Gin and one with Gin and added one mint leaf to each popsicle ( not shown in pictures but I recommend trying ) this weekend hope you enjoy.
- 2 cups tonic water
- 1½ oz gin
- ¼ cup of lime juice
- 1 to 2 thin cucumber slice per popsicle
- 1 mint leaf per popsicle
MIx tonic water ,gin and lime juice and pour evenly into popsicle molds. let it freeze over night and enjoy.
